I want PASTA! Have you felt this way at times? In my household, we are pasta lovers and sometimes Zoodles are not the answer. (sometimes) On those days when I just have to have pasta, I watch my points extra carefully. I save some because I know for dinner it’s on 🙂 Pasta is higher in points and will ruin your day if you overdo it. If that happens, don’t beat yourself up. Tomorrow you get a new set of points and you get to start over 🙂 I portion out my serving as soon as it is done and let it cool.

I set my portion aside to cool a bit, and then portion out the rest for my family. I freeze the leftovers and then I dig in. I enjoy every bite and once I am done and sated, I clean up the dishes and sit down to a nice Skinny Margarita. I feel good and I stayed within my points. I wait for it to cool down outside and go for a stroll with my wife to get some steps in and keep up with The Walking Challenge

If you have some time or you are using your Weeklies to bust through a plateau, change it up a bit with some additional flavor. Once it is cooked put it all in a casserole dish and add some bread crumbs to the top. Bake for 15-20 minutes or until it is browned on the top cut and serve. Make sure you add the points for the bread crumbs, they make a tasty addition to my Bacon Mac and Cheese. recipe. This recipe has jalapenos added for a little heat if you are sensitive to peppers you can omit them or add some green or red pepper for color and flavor. 1/4 cup of Panko bread crumbs adds 3 points.

I love adding Jalapenos to dishes they don’t add too much heat but they do add a distinct flavor. If you are looking for a truly different flavor try adding pickled jalapenos, they are not as spicy as fresh jalapenos but they do add flavor to the dish. Ok, enough about the jalapenos 🙂 Let’s talk about the bacon you use. Not all Turkey bacon is created equally. try different brands to see which one you like the best. I prefer Sam’s Choice over Jeannie-O but that is just a personal preference. I think it cooks up better especially when you want it crispier for dishes like this one.

You can try fat-free cheese and take the bacon out if you are trying for lower points. The bacon adds 1 point per serving I use low-fat cheese because fat-free cheese does not melt as well and in my opinion, it does not taste as good, and the idea is to create low point great tasting meals. It all depends on how many points you have left and if you have any weeklies to use. I love Weight Watchers because you get to design your own meal plans, you get to decide what you eat, and you lose weight. A win-win.

So make sure you start with fresh ingredients that you and your family like and you will create an amazing tasting dish in no time at all. For my Bacon Jalapeno Mac and Cheese use the brand of bacon your and your family like the best, Use low fat or fat-free cheese and add jalapenos or fresh red and green peppers. Bake it with PAnko or your favorite bread crumbs. I am a firm believer that the best ingredients make the recipe taste well the best. Your palette and your family will thank you. Delicious Bacon Mac And Cheese with Jalapenos


Ingredients

Scale
  • 2 cups low fat cheddar cheese
  • 8 oz skim milk
  • 3 strips precooked turkey bacon
  • 2 cups cooked elbow macaroni pasta
  • 3 to 4 pickled jalapenos; chopped

Instructions

  1. Boil pasta as directed on the package. Drain.
  2. In a small saucepan, add milk and bring to a boil.
  3. Add in low-fat cheddar cheese and stir until well until melted.
  4. Put the drained pasta in a medium-sized bowl.
  5. Pour melted cheese over pasta and mix well.
  6. Top with bacon and jalapenos.
  7. Optional: Top with cilantro.

Notes
