You can if you have access to gluten-free rolled oats. They are hard to find but available in some offline and online stores.

You can use coconut yogurt to make it dairy-free, but skipping almond butter will completely change the parfait taste.

6 large dates, pitted
3 tablespoons natural almond butter
3 Tablespoons honey
2 Tablespoons coconut oil, melted
1 teaspoon natural vanilla extract
1 cup rolled oats
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ cup raw almonds, roughly chopped
2 Tablespoons sunflower seeds
2 cups plain Greek yogurt
2 large bananas, sliced
1 cup fresh strawberries, sliced

HOW TO MAKE THE STRAWBERRY-BANANA GRANOLA PARFAIT?

Preheat the oven to 350°F. While the oven is being prepared, line an 8 X 8- inch baking pan with parchment paper, particularly leaving a bit of overlap on the sides.

Now combine the pitted dates, almond butter, honey, coconut oil, and vanilla extract in a high-powered blender or a food processor. Blend the ingredients till you get a creamy mixture.

Take out the mixture from the blender and transfer it to into a large mixing bowl. To that bowl, add the oats, cinnamon, salt, grated almonds, and sunflower seeds.

Mix them well until combined and the oats and nuts are nicely coated.

Transfer the granola mixture to the prepared 8 X 8- inch baking pan and pat it down gently into an even layer. Now place the baking dish in the preheated oven and bake until lightly golden brown and toasted on the top, which should take about 20 minutes.

Now carefully remove the baking pan from the oven and let it cool to room temperature. As you remove the granola from the pan, it will crumble with some larger chunks.

To serve:

  1. Add the first layer of Greek yogurt.
  2. For the second layer, add fresh strawberries and sliced bananas.
  3. Add Greek yogurt again as the third layer.
  4. For the fourth layer, add granola and top it with more strawberries and bananas.

You can also create layers of your choice by alternating Greek yogurt, granola, fresh strawberries, and sliced bananas in 4 parfait dishes or mason jars. Enjoy your banana-strawberry granola parfaits as a yummy breakfast or a healthy dessert!

2 large bananas, sliced
1 c. fresh strawberries, sliced


Instructions

Pre-heat -oven to 350°F and line an 8 x 8-inch baking pan with a piece of parchment paper, leaving a bit of overlap on the sides.

In a high-powered blender or a food processor, combine the pitted dates, almond butter, honey, coconut oil, and vanilla extract. Blend until the mixture is smooth and creamy.

Transfer the date mixture into a large mixing bowl and add the oats, cinnamon, salt, almonds, and sunflower seeds. Mix until well combined and the oats and nuts are nicely coated.

Transfer the granola mixture to the prepared baking dish and pat down into an even layer. Place in the pre-heated oven and bake until lightly golden brown and toasted on top, approximately 20 minutes.

Remove from oven and cool to room temperature. Granola will crumble as you remove it from the pan, with some larger chunks.

To serve, alternate layers of Greek yogurt, granola, sliced bananas, and fresh strawberries in 4 parfait dishes or mason jars. Enjoy!
