How to make cabbage steaks
These cabbage steaks are a hearty dinner that are easy to make. And while the recipe calls for bacon and blue cheese, a few modifications would make this a perfect Meatless Monday meal.
How to cut cabbage steaks
The first thing you want to do to prepare your cabbage is to remove any dark or loose leave. Then start by cutting off the bottom or root end of the cabbage head.
Next, place that flat end on your cutting board. This gives you a stable base to cut. Cut the cabbage from top to bottom, making ½-inch slices. It’s easier if you start at the center and work your way out. And that’s it, perfect cabbage steaks!
Cabbage steaks are low on carbs but high on taste
If you’re trying to eat low carb, especially if you are on the sugar smart, keeping keto, or carb-conscious plans this is the perfect meal. It’s heavy in fiber and extremely low in carbs, so it will fill you up. However, it is a bit high in calories and fat. All is not lost though, it’s easy enough to make the points or bites lower if you need to.
The homemade sauce for these cabbage steaks is wonderful if you enjoy blue cheese. But, that’s also where half the points come into play. Trade that out for fat-free blue cheese dressing and you lose about 4 points or so.
Not a fan of blue cheese? You can simply eliminate it altogether and roast the cabbage as stated in the recipe. That will shave off a point or two as well. You can season it with some fresh garlic and balsamic vinegar, salt and pepper.
We love bacon in our house, but if it’s not your thing, you can ditch the bacon as well. If you want to shave some of those bacon points off, you can use bacon bits. You will still get that great bacon flavor with less work and less calories.
Tip: Actual cook time will vary depending on how thick and evenly the cabbage is sliced and the amount of moisture in the cabbage slices. For best results, check after 30 minutes and adjust final cook time accordingly.
Cabbage steaks on the grill
If grilling is your thing, you can throw cabbage steak on your grill as well as in your oven. Heat up the grill to around 400º, then lightly brush it with some oil. Place your cabbage directly on the grill for 5 minutes. Turn it over and add your toppings and cook for another 5 minutes. If you are grilling though, use the bacon bits as opposed to uncooked bacon.

A complete dinner

1 large head green cabbage, cut into 6 evenly thick slices
2 T. extra virgin olive oil
1 t. garlic powder
Sea salt and black pepper, to taste
6 slices thick-cut bacon, cooked crispy and crumbled
2 oz. blue cheese, crumbled
3 T. fresh parsley, chopped
Blue Cheese Dressing Ingredients:
½ c. full fat sour cream
2 T. sugar-free mayonnaise
1½ t. Worcestershire sauce*
½ small shallot, very finely minced
2 oz. blue cheese crumbles
2 T. heavy cream
Sea salt and freshly cracked pepper, to taste
*Worcestershire sauce contains a small amount of sugar. Omit if avoiding sugar completely.

Low Carb Cabbage Steaks
Ingredients
1 large head green cabbage, cut into 6 evenly thick slices
2 T. extra virgin olive oil
1 t. garlic powder
Sea salt and black pepper, to taste
6 slices thick-cut bacon, cooked crispy and crumbled
2 oz. blue cheese, crumbled
3 T. fresh parsley, chopped
Blue Cheese Dressing Ingredients:
½ c. full fat sour cream
2 T. sugar-free mayonnaise
1½ t. Worcestershire sauce*
½ small shallot, very finely minced
2 oz. blue cheese crumbles
2 T. heavy cream
Sea salt and freshly cracked pepper, to taste
*Worcestershire sauce contains a small amount of sugar. Omit if avoiding sugar completely.
Instructions
Place top oven rack in the center position and pre-heat to 400°F. Line a large, rimmed baking sheet with parchment paper or a Silpat™ baking mat. Set aside.
Cut the stem off the cabbage head to create a flat surface on the bottom. Carefully slice the cabbage, top to bottom, into ½-inch sections.
Transfer the sliced cabbage to the prepared baking sheet without overcrowding. Lightly brush the cabbage with the olive oil and sprinkle with garlic powder. Season with salt and black pepper, to taste.
Place the baking sheet in the pre-heated oven and roast for 40-45 minutes, rotating the sheet once halfway through, or until the cabbage is nicely browned and crispy on the edges.
Once the cabbage is in the oven, prepare the dressing by combining the sour cream, mayonnaise, Worcestershire sauce (if using), shallot, blue cheese, and heavy cream in a medium bowl. Season with salt and black pepper, to taste, and whisk vigorously until thoroughly combined. Set aside.
Remove the baking sheet from the oven and cool for several minutes. Drizzle each cabbage steak with some of the blue cheese dressing and top with the crumbled bacon and blue cheese. Garnish with the fresh parsley and serve immediately. Enjoy!
